Today’s Japanese food is “Hoto”.
“Hoto” is udon including many vegetables (Udon is made from wheat flour). Udon of “Hoto” is like flat noodle and a seasoning of miso (bean paste). It is local cuisine in Yamanashi prefecture.
People eat every winter for warming their body. Vegetables included leek, Chinese cabbage , “shiitake” mushroom , carrot , “shimeji” mushroom, burdock , radish .
“Hoto” is very famous in Yamanashi prefecture, Niboutou of Fukaya, Saitama is famous as well. What is the difference is that “Hoto” is seasoned with miso and “Niboutou” is seasoned with soy sauce.
How to make “Hoto”:
1) Put “dashi” into water (buy “dashi” in grocery store or put the kelp or shiitake mushroom into the water and boiled) and vegetables
2) After water boiled, put chickens or porks.
3) Put the noodle and loosen it.
4) Seasoning miso and cover pot lid wait for 2-3 minutes and ready to eat.
Most “Hoto” noodles are wider and flatter compared to regular udon noodles. So, it is served with white rice as miso soup.
