[ Today’s Japanese food “Tazukuri”]

Sometimes, sesame seeds or nuts are added to the mix to give the Tazukuri a unique flavor and crunchiness.

Today’s Japanese food is “Tazukuri”.
“Tazukuri” is a traditional Japanese food. It is often included in “Osechi” (the traditional New Year’s dish). As part of “Osechi”, “Tazukuri” is associated with a bountiful harvest.

“Tazukuri” is usually made with “Gomame”, a type of small sardine. At first, the sardines are dried. And it is cooked in soy sauce, sugar and mirin (sweet cooking sake), giving them a strong sweet and salty taste.
Once prepared, “Tazukuri” keeps well and can be tabled for any occasion. It is eaten with rice or by itself with Japanese “sake”.

It is sticky because of the sugar and mirin, but feels crunchy too. Some kids like it as a snack.
